Gnocchi alla Sorrentina

Perfect as your Sunday meal and a classic Sorrento dinner, Gnocchi alla Sorrentina is simple in preparation and spectacular in taste. This version of Gnocchi is well known in the region of Campania and is typically made from fresh, local grown products. Just a few ingredients are needed to make this delicious meal: boiled and mashed potatoes, flour, water or egg and a pinch of salt, and it’s usually served with fresh tomato sauce, fior di latte or treccia local cheese, basil and a sprinkle of parmesan to finish. Once all the ingredients have been added, the dish is cooked in the oven for 15 minutes on grill until the cheese has melted and until you cannot resist the delicious aroma anymore.

Spaghetti alla Nerano

This delicious dish is made up of Courgettes, Basil, Black Pepper and a mix of different cheeses that varies by the taste and preference of the Chef that cooks it, but Provalone from Monaco is the most famous cheese used in this recipe. The real recipe is a true secret and and if you try to reproduce it the exact way it is served in Nerano, the small town where this dish originates from, it is almost impossible! Cannelloni

This dish reminds me of family gatherings at home or out at a restaurant, for special occasion or also just for the pleasure that the taste gives you. Cannelloni consists of Mozzarella, Ricotta, Eggs, Basil and lots and lots of parmesan all layerd in sheets of home made pasta and served with a fresh tomato sauce after being cooking in the hot oven for around 20 minutes to allow all of the ingredients to blend and mix together, creating that delicious taste.

Ravioli alla Caprese

When preparing this dish, even the shape of a single Raviolo reminds you of the shape of the Island of Capri on a calm and clear morning, and the taste is as delicious as the island is beautiful. Ravioli are made from a few simple ingredients: flour, hot water, olive oil and a pinch of salt. Mixed together then rolled into thin strips, on top spoonfuls of a mix of grated caciotta di Sorrento (ideally of the day before), eggs, parmesan and marjoram are placed well separated from the other and then covered with another strip of dough and finally cut with a pastry cutter. Ravioli alla Caprese is served with a simple sauce of fresh tomatoes and topped with basil and parmesan.
